Calling all #tacotuesday fans! In case you forgot (but really, how could you?), this weekend is Cinco de Mayo (AKA: The ultimate excuse to stuff your face with the biggest bowl of guac and perhaps a margarita or two). It’s a holiday, so calories don’t count. I read that somewhere..
But, if you want to celebrate while not totally bailing on your healthy eating ambitions, I’ve got you covered. We love Mexican food at our house, and I’m excited to share with you three of our go-to recipes that are healthy, quick and SO delicious. Bet these make you – and your family – muy feliz!
Crockpot chicken verde soup (gluten free & low calorie)
I am a soup junkie. Even in the warm weather months, I love me some piping hot soup.
The problem is that all the canned soups at the store are so full of sodium (i.e. immediate water retention and bloating!), it’s just not worth it for me to buy that stuff. So, I’m always looking on Pinterest for low sodium soup ideas. But typically, low sodium can mean it’s somewhat low on flavor.
BUT WAIT! Did you know that replacing salty-ness with spice can trick your brain and taste buds into thinking there’s more more sodium?
When I stumbled upon this Slow Cooker Chicken Chili Verde soup recipe and read through the ingredients, I was impressed that it didn’t call for a ton of added salt. When I made it, I was even more impressed with the flavor of this crockpot soup! Thank you to maebells for sharing this recipe.
Baked chicken fajitas
Anytime we go out for Mexican food, you can usually find me ordering some sizzling fajitas. They are SO delish (but sooo salty). I loved the idea of a healthy, baked version of chicken fajitas, so I was excited to try these when I found this recipe several years ago. It is so easy, quick and filling that it’s a normal staple at our house!
Two-minute cilantro lime rice
I recently tried my own take on a cilantro lime rice recipe that I tried out as a side dish for a friend who just had a baby. I think it’s safe to say that she loved it! If you’re looking for a delicious – and no-joke two-minute side to accompany your Oven Baked Chicken Fajitas, you’ve gotta try this!
